What is our favorite carrot cake or soup without carrots. We add carrots to different recipe and salad to make it crunchy,colorful and healthy. They are delicious eaten raw or cook. Carrots also provide different nutritional values. Carrots are root crops, it can be harvested all year round. It’s usually associated with the color orange but we can actually found carrots in a variety of colors like white, yellow, red and purple. Carrots can be as long as 2 inches to 3 feet. It has a crunch texture, freshly tasting and slightly bitter.
Carrots along with spinach and squash has anti oxidant and beta carotene contents which prevents cardio vascular diseases. It is also rich in Vitamin A and carotenoid which is good for eyesight, skin health, and normal growth. It reduce the risk of eye problems like glaucoma and cataracts if consume in a regular basis. Study shows that it also has some anti cancer benefits especially of colon cancer . Carrots are simply too rich in digestive tract supporting fiber which aids in the lower digestive tract activities. It has a higher natural sugar content than all other vegetables with the exception of beets. This is why they make a wonderful snack when eaten raw and make a tasty addition to a variety of cooked dishes.
